If It's Good Enough for Mario

Olio&Olive is happy to now offer Cacio di Roma - a cheese that has been brought to you by popular demand, most likely fueled by the air time it's been getting from Roman chef extraordinaire, Mario Batali, who swears by the stuff. However this creamy, tangy, fruity ewe's milk hard cheese does not owe its fame to Stateside hype...quite the contrary...

Cacio is the epitome of the central Italian working man's cheese that is readily available in people's homes and any neighborhood restaurant throughout the area.  Fancy is not its middle name.
For us at Olio&Olive, Cacio particularly takes us back several years to a memorable trip to Rome, where we had a fantastic lunch at La Fiaschetteria Beltramme, a small restaurant near the Spanish Steps that dates back to 1886 which was a favorite haunt of Fellini's and where one can now (literally) rub shoulders at their communal tables with the likes of Monica Bellucci and other famous patrons.

We got to meet the chef and watch him in action preparing their signature dish, Tonnarelli Cacio e Pepe. Simple. Satisfying. Delicious. An egg-based pasta (think square spaghetti) with cacio cheese and pepper. This is Mario's flavor with Rachel's cooking time!!

Aren't you lucky we have all the ingredients AND the recipe?? Just saved you a chunk of change on flights and lodging (but DO go to La Fiaschetteria when you are next in Rome to see how it's done)!

About the Author

As you may have guessed, we are seriously passionate about food, and especially about olive oil. As Italians, we were raised on it and probably have rarely gone without it on a daily basis. It is our Golden Nectar. It was drizzled into our first "pappe" (mushy baby meals), spiced to top our pizzas, passed around the table to dress our salads, rubbed liberally on every roast, poured generously into every sauce, used in lieu of butter in our favorite sweets - we've even seen our grandmothers condition their hair with the olive oil sitting in the kitchen cupboard!
